In 1923, Shinjiro Torii had the idea to create a whisky that would include the essence of Japanese nature and would be hand-crafted by artisans using a meticulous method that would enhance the work that nature had already done. He had a fantasy of producing a whisky that was delicate, refined, and complex all at the same time. This whisky would complement the sophisticated taste of the Japanese and elevate their dining experience. Even though traditional Scotch whisky was Torii’s initial source of inspiration, he envisioned a Japanese approach to the process and hence chose a terrain and climate that were radically different from those of Scotland..

“Jack” is actually Jasper Newton Daniel, who was taught how to make whisky by none other than a Preacher. “Jack” is the brand name of Daniel’s whisky. In 1866, he reached a level of self-assurance that allowed him to build the very first registered distillery in the United States. I can’t help but wonder if he ever dreamed that his distillery would reach such great heights.
